Dherosh Bhorta (stuffed Okra)

Ingredients

  • 20 fresh okra
  • 1 cup finely chopped onions
  • 1/2 cup chopped tomatoes
  • 2 green chilies, finely chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 2 tablespoons oil
  • Salt to taste

Instructions

  1. Wash the okra and pat them dry. Cut off the tops and make a lengthwise slit in each okra, being careful not to cut all the way through.
  2. In a bowl, mix together the onions, tomatoes, green chilies, turmeric powder, cumin powder, coriander powder, red chili powder, and salt.
  3. Stuff each okra with the prepared filling mixture.
  4. Heat oil in a pan and place the stuffed okra in a single layer. Cook on low heat, turning occasionally, until the okra is tender and the filling is cooked through.
  5. Once cooked, remove from heat and serve hot.
