Ingredients

  • 1 cup gram flour (besan)
  • 1/2 cup yogurt
  • 1 teaspoon ginger-green chili paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon sugar
  • Salt to taste
  • 1 teaspoon fruit salt
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon sesame seeds
  • 2-3 curry leaves
  • 2-3 tablespoons chopped coriander leaves

Instructions

  1. In a mixing bowl, combine gram flour, yogurt, ginger-green chili paste, turmeric powder, sugar, and salt. Mix well to form a smooth batter.
  2. Add fruit salt to the batter and mix gently. The batter will become frothy.
  3. Grease the waffle maker with oil and pour a ladleful of the batter onto the waffle maker. Close the lid and cook until the waffle is golden and crispy.
  4. Heat oil in a small pan and add mustard seeds. Once they splutter, add sesame seeds and curry leaves. Pour this tempering over the prepared dhokla waffles.
  5. Garnish with chopped coriander leaves and serve hot with chutney or ketchup.
