Ingredients
- 1 large eggplant, sliced into 1/2-inch rounds

Instructions
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a shallow dish, combine the whole wheat breadcrumbs, Parmesan cheese, oregano, garlic powder, salt, and black pepper.
- Dip each eggplant slice into the beaten eggs, then coat with the breadcrumb mixture. Place the coated slices on the prepared baking sheet.
- Bake the eggplant slices for 20 minutes, flipping them halfway through, until they are golden and crisp.
