Diabetic-friendly Eggplant Parmesan

Ingredients

  • 1 large eggplant, sliced into 1/2-inch rounds
  • 1 cup whole wheat breadcrumbs

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • 1 1/2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh basil

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a shallow dish, combine the whole wheat breadcrumbs, Parmesan cheese, oregano, garlic powder, salt, and black pepper.
  3. Dip each eggplant slice into the beaten eggs, then coat with the breadcrumb mixture. Place the coated slices on the prepared baking sheet.

  9. Sprinkle the chopped basil over the top before serving.
