Diabetic-friendly Stuffed Bell Peppers

Ingredients

  • 4 large bell peppers, any color
  • 1 pound lean ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 1/2 cup cooked quinoa
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1/2 cup shredded low-fat cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, cook the ground turkey, onion, and garlic over medium heat until the turkey is no longer pink.
  4. Stir in the diced tomatoes, quinoa, oregano, cumin, salt, and pepper. Cook for an additional 5 minutes.
  5. Stuff the bell peppers with the turkey mixture and place them in a baking dish. Sprinkle the tops with shredded cheese.
  6. Cover the dish with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 5 minutes until the cheese is melted and bubbly.
  7. Remove from the oven and let the peppers cool for a few minutes before serving.
