Ingredients
- 4 large bell peppers, any color
- 1 pound lean ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup diced tomatoes
- 1/2 cup cooked quinoa
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 1/2 cup shredded low-fat cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, cook the ground turkey, onion, and garlic over medium heat until the turkey is no longer pink.
- Stir in the diced tomatoes, quinoa, oregano, cumin, salt, and pepper. Cook for an additional 5 minutes.
- Stuff the bell peppers with the turkey mixture and place them in a baking dish. Sprinkle the tops with shredded cheese.
- Cover the dish with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 5 minutes until the cheese is melted and bubbly.
- Remove from the oven and let the peppers cool for a few minutes before serving.
