Diabetic-friendly Tuna Nicoise Salad

Ingredients

  • 1 lb fresh tuna steak
  • 1 lb baby potatoes, halved
  • 4 large eggs
  • 1/2 lb green beans, trimmed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pitted black olives
  • 4 cups mixed salad greens
  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Bring a pot of water to a boil and cook the potatoes for 8-10 minutes until tender. Drain and set aside.
  2. In the same pot, boil the eggs for 8 minutes, then transfer to a bowl of ice water to cool. Peel and halve the eggs.
  3. Blanch the green beans in boiling water for 2 minutes, then transfer to ice water to stop the cooking process. Drain and set aside.
  4. Season the tuna steak with salt and pepper, then sear in a hot pan for 2-3 minutes per side. Let it rest for a few minutes, then slice into thin strips.
  5. In a large bowl, combine the salad greens, potatoes, green beans, cherry tomatoes, and olives.
  6. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper to make the dressing.
  7. Divide the salad onto plates, top with the sliced tuna and halved eggs, then drizzle with the dressing.
