Ingredients
- 1 lb fresh tuna steak
- 1 lb baby potatoes, halved
- 4 large eggs
- 1/2 lb green beans, trimmed
- 1 cup cherry tomatoes, halved
- 1/2 cup pitted black olives
- 4 cups mixed salad greens
- 1/4 cup extra virgin olive oil
- 2 tbsp red wine vinegar
- Salt and pepper to taste
Instructions
- Bring a pot of water to a boil and cook the potatoes for 8-10 minutes until tender. Drain and set aside.
- In the same pot, boil the eggs for 8 minutes, then transfer to a bowl of ice water to cool. Peel and halve the eggs.
- Blanch the green beans in boiling water for 2 minutes, then transfer to ice water to stop the cooking process. Drain and set aside.
- Season the tuna steak with salt and pepper, then sear in a hot pan for 2-3 minutes per side. Let it rest for a few minutes, then slice into thin strips.
- In a large bowl, combine the salad greens, potatoes, green beans, cherry tomatoes, and olives.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper to make the dressing.
- Divide the salad onto plates, top with the sliced tuna and halved eggs, then drizzle with the dressing.
