Ingredients

  • 2 cups dried cowpeas
  • 1 large onion, chopped
  • 3 tomatoes, diced
  • 2 cups spinach, chopped
  • 2 tablespoons vegetable oil
  • 2 teaspoons salt
  • 1 teaspoon paprika
  • 4 cups water

Instructions

  1. Soak the dried cowpeas in water overnight.
  2. In a large pot, heat the vegetable oil over medium heat.
  3. Add the chopped onion and cook until translucent.
  4. Add the diced tomatoes, salt, and paprika. Cook for 5 minutes.
  5. Drain the soaked cowpeas and add them to the pot.
  6. Pour in the water and bring to a boil.
  7. Reduce the heat, cover, and simmer for 1 hour or until the cowpeas are tender.
  8. Add the chopped spinach and cook for an additional 5 minutes.
  9. Adjust seasoning if needed and serve hot.
