Dikgobe Delicacy is a traditional dish from Botswana that is loved for its rich flavors and hearty ingredients.
Ingredients
- 2 cups dried cowpeas
- 1 large onion, chopped
- 3 tomatoes, diced
- 2 cups spinach, chopped
- 2 tablespoons vegetable oil
- 2 teaspoons salt
- 1 teaspoon paprika
- 4 cups water
Instructions
- Soak the dried cowpeas in water overnight.
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and cook until translucent.
- Add the diced tomatoes, salt, and paprika. Cook for 5 minutes.
- Drain the soaked cowpeas and add them to the pot.
- Pour in the water and bring to a boil.
- Reduce the heat, cover, and simmer for 1 hour or until the cowpeas are tender.
- Add the chopped spinach and cook for an additional 5 minutes.
- Adjust seasoning if needed and serve hot.
