Dikgobe Delight

Ingredients

  • 2 cups dried cowpeas, soaked overnight
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 3 cups water
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 2 tablespoons vegetable oil

Instructions

  1. Drain the soaked cowpeas and rinse them under cold water.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the diced tomatoes, salt, paprika, coriander, and cumin to the pot. Stir well to combine.
  4. Next, add the drained cowpeas to the pot and pour in the water. Bring the mixture to a boil, then reduce the heat and let it simmer for 1 hour, or until the cowpeas are tender.
  5. Once the cowpeas are cooked, adjust the seasoning if needed and serve the Dikgobe hot.
