Dikgobe Delight
Dikgobe Delight is a traditional Botswana dish that is both hearty and flavorful. This stew-like dish is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 2 cups dried cowpeas, soaked overnight
- 1 onion, chopped
- 2 tomatoes, diced
- 3 cups water
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 2 tablespoons vegetable oil
Instructions
- Drain the soaked cowpeas and rinse them under cold water.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the diced tomatoes, salt, paprika, coriander, and cumin to the pot. Stir well to combine.
- Next, add the drained cowpeas to the pot and pour in the water. Bring the mixture to a boil, then reduce the heat and let it simmer for 1 hour, or until the cowpeas are tender.
- Once the cowpeas are cooked, adjust the seasoning if needed and serve the Dikgobe hot.
