Ingredients

  • 4 large potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp turmeric
  • 1 tsp ground ginger
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground fenugreek
  • 1/4 cup vegetable oil
  • Salt to taste
  • Water

Instructions

  1. In a large pot, add the cubed potatoes and enough water to cover them. Boil the potatoes until they are fork-tender, then drain and set aside.
  2. In a separate pan, heat the vegetable oil over medium heat. Add the onions and sauté until they are soft and translucent.
  3. Add the minced garlic, turmeric, ginger, cardamom, and fenugreek to the pan. Stir well to combine the spices with the onions.
  4. Add the boiled potatoes to the pan and gently mix them with the spiced onion mixture. Cook for a few minutes to allow the flavors to meld together.
  5. Season with salt to taste and remove from heat. Serve the Dinich Alicha warm or at room temperature.
