Ingredients
- 4 large potatoes, peeled and cubed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp turmeric
- 1 tsp ground ginger
- 1/2 tsp ground cardamom
- 1/4 tsp ground fenugreek
- 1/4 cup vegetable oil
- Salt to taste

Instructions
- In a large pot, add the cubed potatoes and enough water to cover them. Boil the potatoes until they are fork-tender, then drain and set aside.
- In a separate pan, heat the vegetable oil over medium heat. Add the onions and sauté until they are soft and translucent.
- Add the minced garlic, turmeric, ginger, cardamom, and fenugreek to the pan. Stir well to combine the spices with the onions.
- Add the boiled potatoes to the pan and gently mix them with the spiced onion mixture. Cook for a few minutes to allow the flavors to meld together.
- Season with salt to taste and remove from heat. Serve the Dinich Alicha warm or at room temperature.
