Ingredients
- 2 large sweet potatoes, peeled and cubed
- 1 cup red lentils, rinsed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons berbere spice mix
- 4 cups vegetable broth
- 2 tablespoons olive oil
- Salt to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and sauté until they are soft and translucent.
- Add the garlic, ginger, and berbere spice mix to the pot. Stir well to combine and let the spices toast for a minute.
- Add the sweet potatoes and lentils to the pot, then pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 30-35 minutes, or until the sweet potatoes and lentils are tender.
