Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 cup red lentils, rinsed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons berbere spice mix
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and sauté until they are soft and translucent.
  2. Add the garlic, ginger, and berbere spice mix to the pot. Stir well to combine and let the spices toast for a minute.
