Ingredients
- 2 cups of white rice
- 1 can of coconut milk
- 1 15-ounce can of kidney beans, drained and rinsed
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 green bell pepper, diced
- 2 tablespoons of olive oil
- 1 teaspoon of thyme
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions, garlic, and green bell pepper. Cook until the onions are translucent.
- Stir in the rice and thyme, and cook for 2 minutes, stirring constantly.
- Pour in the coconut milk and 2 cups of water. Add the kidney beans, salt, and pepper. Stir well.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork before serving.
