Ingredients

  • 2 cups of white rice
  • 1 can of coconut milk
  • 1 15-ounce can of kidney beans, drained and rinsed
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 green bell pepper, diced
  • 2 tablespoons of olive oil
  • 1 teaspoon of thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions, garlic, and green bell pepper. Cook until the onions are translucent.
  2. Stir in the rice and thyme, and cook for 2 minutes, stirring constantly.
  3. Pour in the coconut milk and 2 cups of water. Add the kidney beans, salt, and pepper. Stir well.
