Ingredients

  • 2 cups of long-grain white rice
  • 1 cup of dried djon djon mushrooms
  • 4 cups of water
  • 1 tablespoon of olive oil
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • Salt to taste

Instructions

  1. Rinse the djon djon mushrooms to remove any dirt or debris, then place them in a bowl and cover with 2 cups of hot water. Let them soak for at least 30 minutes to rehydrate.
  2. While the mushrooms are soaking, rinse the rice under cold water until the water runs clear. Drain the rice and set aside.
  3. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  4. Add the rice to the pot and stir to coat the grains with the onion and garlic mixture.
  5. Strain the rehydrated djon djon mushrooms, reserving the soaking liquid. Add the mushrooms and 2 cups of the soaking liquid to the pot with the rice. Discard any remaining soaking liquid.
  6. Add an additional 2 cups of water to the pot, then season with salt to taste. Stir gently to combine all the ingredients.
  7. Bring the pot to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and has absorbed all the liquid.
  8. Once the rice is cooked, fluff it with a fork and let it sit, covered, for a few minutes before serving.
