Ingredients

  • 1 cup white rice
  • 1/2 lb ground pork
  • 1/2 lb chicken livers, chopped
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 cups chicken broth
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the ground pork and cook until browned.
  2. Add the chicken livers, onion, bell pepper, and garlic. Cook until the vegetables are softened.
  3. Stir in the diced tomatoes, paprika, and cayenne pepper. Cook for 2-3 minutes.
  4. Add the rice to the pot and stir to combine with the other ingredients.
  5. Pour in the chicken broth and season with salt and pepper. Bring to a boil, then reduce the heat to low and cover the pot.
  6. Simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
