Ingredients
- 1 cup white rice
- 1/2 lb ground pork
- 1/2 lb chicken livers, chopped
- 1 onion, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 2 tomatoes, diced
- 2 cups chicken broth
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the ground pork and cook until browned.
- Add the chicken livers, onion, bell pepper, and garlic. Cook until the vegetables are softened.
- Stir in the diced tomatoes, paprika, and cayenne pepper. Cook for 2-3 minutes.
- Add the rice to the pot and stir to combine with the other ingredients.
- Pour in the chicken broth and season with salt and pepper. Bring to a boil, then reduce the heat to low and cover the pot.
- Simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let the rice rest for 5 minutes before fluffing with a fork.
