Djaj Kebab (grilled Chicken Skewers With Herb Marinade)
Djaj Kebab is a popular Libyan dish consisting of grilled chicken skewers marinated in a flavorful herb mixture. This dish is perfect for a summer barbecue or a casual weeknight dinner.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
- 8 wooden or metal skewers
Instructions
- In a large bowl, combine the olive oil, lemon juice, minced garlic, cumin, paprika, coriander, cayenne pepper, chopped parsley, and chopped cilantro. Season with salt and pepper.
- Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken cubes onto the skewers, dividing them evenly.
- Grill the chicken skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
