Djaj Kebab (grilled Chicken Skewers With Herb Marinade)

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • 8 wooden or metal skewers

Instructions

  1. In a large bowl, combine the olive oil, lemon juice, minced garlic, cumin, paprika, coriander, cayenne pepper, chopped parsley, and chopped cilantro. Season with salt and pepper.
  2. Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated chicken cubes onto the skewers, dividing them evenly.
  6. Grill the chicken skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  7. Remove the skewers from the grill and let them rest for a few minutes before serving.
