Djaj Mqualli is a traditional Berber-style grilled quail dish that is bursting with flavor. This recipe combines aromatic spices with tender grilled quail for a delightful culinary experience.
Ingredients
- 8 quails, cleaned and halved
- 1/4 cup olive oil
- 2 teaspoons ground cumin
- 2 teaspoons paprika
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
- 1 lemon, cut into wedges
Instructions
- In a small bowl, mix the olive oil, cumin, paprika, ginger, cinnamon, salt, and pepper to create a marinade.
- Place the quail halves in a large resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the quail. Let it marinate in the refrigerator for at least 1 hour.
- Preheat the grill for medium-high heat.
- Remove the quail from the marinade and shake off the excess. Discard the remaining marinade.
- Grill the quail on the preheated grill until they are no longer pink at the bone and the juices run clear, about 8 minutes per side.
- Transfer the grilled quail to a serving platter, sprinkle with chopped cilantro, and serve with lemon wedges.
