Ingredients

  • 8 quails, cleaned and halved
  • 1/4 cup olive oil
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro
  • 1 lemon, cut into wedges

Instructions

  1. In a small bowl, mix the olive oil, cumin, paprika, ginger, cinnamon, salt, and pepper to create a marinade.
  2. Place the quail halves in a large resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the quail. Let it marinate in the refrigerator for at least 1 hour.
  3. Preheat the grill for medium-high heat.
  4. Remove the quail from the marinade and shake off the excess. Discard the remaining marinade.
  5. Grill the quail on the preheated grill until they are no longer pink at the bone and the juices run clear, about 8 minutes per side.
  6. Transfer the grilled quail to a serving platter, sprinkle with chopped cilantro, and serve with lemon wedges.
