Ingredients
- 1 whole chicken, about 3-4 lbs
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 2 tablespoons fresh thyme, chopped

- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Rinse the chicken and pat dry with paper towels.
- In a small bowl, mix together the olive oil, minced garlic, lemon juice, thyme, and rosemary.
- Place the chicken in a roasting pan and rub the herb mixture all over the chicken, including under the skin.
