Ingredients

  • 1 whole chicken, cut into pieces
  • 1/4 cup fresh mint leaves, chopped
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 lemon, juiced and zested
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix the chopped mint, minced garlic, olive oil, lemon juice, and zest. Season with salt and pepper.
  2. Place the chicken pieces in a large resealable plastic bag and pour the marinade over the chicken. Seal the bag and massage the marinade into the chicken. Refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the oven to 375°F (190°C).
  4. Place the marinated chicken pieces on a baking sheet and roast in the preheated oven for 1 hour, or until the chicken is cooked through and golden brown.
  5. Remove from the oven and let it rest for a few minutes before serving.
