Djej Mishwe (mint And Lemon Roasted Chicken)
Djej Mishwe is a traditional Levantine dish of roasted chicken marinated in mint and lemon, resulting in a flavorful and aromatic main course.
Ingredients
- 1 whole chicken, cut into pieces
- 1/4 cup fresh mint leaves, chopped
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1 lemon, juiced and zested
- Salt and pepper to taste
Instructions
- In a bowl, mix the chopped mint, minced garlic, olive oil, lemon juice, and zest. Season with salt and pepper.
- Place the chicken pieces in a large resealable plastic bag and pour the marinade over the chicken. Seal the bag and massage the marinade into the chicken. Refrigerate for at least 2 hours, or overnight for best results.
- Preheat the oven to 375°F (190°C).
- Place the marinated chicken pieces on a baking sheet and roast in the preheated oven for 1 hour, or until the chicken is cooked through and golden brown.
- Remove from the oven and let it rest for a few minutes before serving.
