Djiboutian Spiced Cauliflower Soup (Soupe de Chou-Fleur Épicée Djiboutienne)

Ingredients
- 1 head of cauliflower, chopped
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- 4 cups vegetable broth
- 1/2 cup coconut milk
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the cauliflower, cumin, coriander, turmeric, and cayenne pepper. Cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until the cauliflower is tender.
- Using an immersion blender, purée the soup until smooth. Alternatively, transfer the soup to a blender and purée in batches.
- Stir in the coconut milk and season with salt and pepper to taste.
- Serve the soup hot, garnished with chopped cilantro.
