Ingredients
- 2 cups dried lentils
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, diced
- 1 1/2 cups fresh spinach, chopped
- 2 tablespoons Djiboutian spice blend
- 4 cups vegetable broth
- Salt to taste
- 2 tablespoons olive oil
Instructions
- Rinse the lentils and set aside.
- Heat the olive oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
