Djiboutian Spiced Lentil and Spinach Curry (Curry de Lentilles et d'Épinards Épicé Djiboutien)

Ingredients

  • 2 cups dried lentils
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, diced
  • 1 1/2 cups fresh spinach, chopped
  • 2 tablespoons Djiboutian spice blend
  • 4 cups vegetable broth
  • Salt to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse the lentils and set aside.
  2. Heat the olive oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
