Djiboutian Spiced Potato Curry (Curry de Pommes de Terre Épicé Djiboutien)

Ingredients

  • 4 large potatoes, peeled and cubed

  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 1 cup vegetable broth
  • Salt to taste
  • Fresh cilantro for garnish

Instructions
