Ingredients
- 1 small pumpkin, peeled and diced
- 1 onion, chopped
- 2 garlic cloves, minced

- 4 cups vegetable broth
- 1/2 cup coconut milk
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the diced pumpkin, ground cumin, ground cinnamon, and cayenne pepper. Cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and simmer for 20 minutes, or until the pumpkin is tender.

- Stir in the coconut milk and season with salt and pepper to taste.
