Djiboutian Vegetable Samosas (Samosas de Légumes Djiboutiens)

Ingredients
- 2 large potatoes, boiled and mashed
- 1 cup green peas
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder
- Salt to taste
- 12 sheets of samosa pastry or phyllo dough
- Oil for frying
Instructions
- In a large bowl, mix together the mashed potatoes, green peas, chopped onion, green chilies, cumin seeds, garam masala, turmeric powder, coriander powder, red chili powder, and salt. This will be the filling for the samosas.
- Take one sheet of samosa pastry or phyllo dough and place a spoonful of the vegetable filling in the center. Fold the pastry over the filling to form a triangle, then continue folding in a triangular shape until the end of the pastry. Use a flour and water mixture to seal the edges.
- Heat oil in a deep pan over medium heat. Once the oil is hot, carefully place the samosas in the oil and fry until golden brown and crispy. Remove and drain on paper towels.
- Serve the samosas hot with your favorite chutney or dipping sauce.
