Ingredients

  • 6 eggs, separated
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 8 oz semisweet chocolate, chopped
  • 1 cup confectioners' sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup water
  • 1 cup granulated sugar (for caramel)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour 6 (9-inch) round cake pans.
  2. In a large bowl, beat the egg yolks with the granulated sugar until light and fluffy. In a separate bowl, beat the egg whites until stiff peaks form.
  3. Gently fold the egg whites into the yolk mixture. Sift the flour and baking powder over the egg mixture and fold in gently until combined.
  4. Divide the batter evenly among the prepared cake pans. Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 5 minutes, then transfer to wire racks to cool completely.
  5. In a heatproof bowl set over a pot of simmering water, melt the chocolate. In another bowl, beat the butter and confectioners' sugar until light and fluffy. Add the melted chocolate and vanilla extract, and beat until smooth and creamy.
  6. Spread a layer of chocolate buttercream between each cake layer, stacking them on top of each other.
  7. In a small saucepan, combine the water and granulated sugar for the caramel. Cook over medium heat, swirling the pan occasionally, until the mixture turns a deep amber color. Remove from heat and pour the caramel over the top cake layer, spreading it quickly with a spatula.
  8. Let the caramel set before slicing and serving the Dobos Torta.
