Dolma (armenian Stuffed Artichokes)
Dolma is a traditional Armenian dish made with artichokes stuffed with a flavorful mixture of rice, herbs, and spices. This dish is a labor of love, but the result is a delicious and satisfying meal that is perfect for special occasions or family gatherings.
Ingredients
- 6 large artichokes
- 1 cup rice
- 1 onion, finely chopped
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh dill
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Juice of 2 lemons
- 3 cups vegetable broth
Instructions
- Prepare the artichokes by cutting off the top third and trimming the sharp tips of the leaves.
- In a large bowl, combine the rice, onion, parsley, mint, dill, olive oil, salt, and black pepper. Mix well.
- Stuff the rice mixture between the leaves of each artichoke.
- Place the stuffed artichokes in a large pot and pour the vegetable broth over them. Squeeze the lemon juice over the artichokes.
- Cover the pot and cook the artichokes over medium heat for 1 hour, or until the rice is fully cooked and the artichokes are tender.
