Ingredients

  • 6 large artichokes
  • 1 cup rice
  • 1 onion, finely chopped
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh dill
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Juice of 2 lemons
  • 3 cups vegetable broth

Instructions

  1. Prepare the artichokes by cutting off the top third and trimming the sharp tips of the leaves.
  2. In a large bowl, combine the rice, onion, parsley, mint, dill, olive oil, salt, and black pepper. Mix well.
  3. Stuff the rice mixture between the leaves of each artichoke.
  4. Place the stuffed artichokes in a large pot and pour the vegetable broth over them. Squeeze the lemon juice over the artichokes.
  5. Cover the pot and cook the artichokes over medium heat for 1 hour, or until the rice is fully cooked and the artichokes are tender.
