Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the chopped mushroom stems and tomato to the skillet. Cook for 5 minutes.
  3. In a bowl, combine the cooked rice, sautéed vegetables, parsley, paprika, salt, and pepper. Mix well.
  4. Stuff each mushroom cap with the rice mixture.
  5. Heat the remaining olive oil in a large pan over medium heat. Place the stuffed mushrooms in the pan and cook for 15-20 minutes, or until the mushrooms are tender.
  6. Serve the dolma hot and enjoy!
