Ingredients

  • 8 large onions
  • 1 cup rice
  • 1/2 lb ground beef
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cinnamon
  • 1 lemon, juiced
  • 2 cups vegetable broth

Instructions

  1. Peel the onions and cut off the tops. Scoop out the centers, leaving a few outer layers intact to form a shell.
  2. In a bowl, mix together the rice, ground beef, parsley, mint, olive oil, salt, pepper, paprika, cinnamon, and lemon juice.
  3. Stuff the onion shells with the rice and beef mixture.
  4. Place the stuffed onions in a pot and pour the vegetable broth over them.
  5. Cover the pot and cook the dolma over medium heat for 1 hour, or until the onions are tender and the filling is cooked through.
  6. Serve the dolma hot, garnished with additional fresh herbs if desired.
