Ingredients

  • 4 large bell peppers
  • 1 cup rice
  • 1 lb ground beef
  • 1 onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 2 cups chicken or vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix together the rice, ground beef, onion, parsley, mint, olive oil, lemon juice, salt, pepper, paprika, and cumin.
  4. Stuff the bell peppers with the rice and meat mixture.
  5. Place the stuffed peppers in a deep pot and pour the chicken or vegetable broth over them.
  6. Cover the pot and cook the dolma over low heat for 1 hour, or until the peppers are tender and the filling is cooked through.
  7. Serve the dolma hot, garnished with additional fresh herbs if desired.
