Ingredients

  • 4 small yellow squash
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the squash and scoop out the seeds to create a hollow cavity.
  3. In a bowl, mix together the cooked rice, onion, tomatoes, parsley, mint, olive oil, lemon juice, salt, and pepper.
  4. Stuff the hollowed-out squash with the rice mixture.
  5. Place the stuffed squash in a deep pot and add enough water to cover them halfway.
  6. Cover the pot and cook over medium heat for 1 hour, or until the squash is tender and the rice is cooked.
  7. Serve the stuffed squash hot, garnished with additional fresh herbs if desired.
