Ingredients
- 4 small yellow squash
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup olive oil
- 1/4 cup lemon juice
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the squash and scoop out the seeds to create a hollow cavity.
- In a bowl, mix together the cooked rice, onion, tomatoes, parsley, mint, olive oil, lemon juice, salt, and pepper.
- Stuff the hollowed-out squash with the rice mixture.
- Place the stuffed squash in a deep pot and add enough water to cover them halfway.
- Cover the pot and cook over medium heat for 1 hour, or until the squash is tender and the rice is cooked.
- Serve the stuffed squash hot, garnished with additional fresh herbs if desired.
