Ingredients

  • 6 large tomatoes
  • 1 cup rice
  • 1 lb ground beef
  • 1 onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the tomatoes and scoop out the insides. Sprinkle the insides with salt and let them drain upside down on a paper towel while preparing the filling.
  3. In a large bowl, combine the rice, ground beef, onion, parsley, mint, olive oil, paprika, cumin, salt, and pepper. Mix well.
  4. Stuff the tomatoes with the rice and meat mixture, place them in a baking dish, and cover with the tomato tops.
  5. Bake for 1 hour or until the tomatoes are tender and the filling is cooked through.
  6. Serve the dolma hot as an appetizer or side dish.
