Dolma Biber (stuffed Bell Peppers)

Ingredients

  • 4 large bell peppers
  • 1 cup rice
  • 250g ground beef or lamb
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups vegetable or beef broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine the rice, ground meat, onion, tomatoes, parsley, olive oil, paprika, cumin, salt, and pepper.
  4. Stuff the bell peppers with the rice and meat mixture.
  5. Place the stuffed peppers in a deep pot and pour the broth over them.
  6. Cover the pot and cook over medium heat for 30-40 minutes, or until the peppers are tender and the filling is cooked through.
  7. Serve the dolma biber hot, garnished with additional parsley if desired.
