Ingredients

  • 6 large bell peppers
  • 1 cup long-grain rice
  • 1 lb ground lamb
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 tbsp tomato paste
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine the rice, ground lamb, onion, tomatoes, tomato paste, parsley, mint, olive oil, cumin, cinnamon, salt, and pepper. Mix well.
  4. Stuff the bell peppers with the rice and lamb mixture and place them in a deep pot.
  5. Pour the chicken or vegetable broth over the stuffed peppers.
  6. Cover the pot and cook on the stovetop over medium heat for 1 hour, or until the peppers are tender and the filling is cooked through.
  7. Serve the dolma biber hot, garnished with additional fresh herbs if desired.
