Ingredients
- 6 large bell peppers
- 1 cup long-grain rice
- 1 lb ground lamb
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 tbsp tomato paste
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup olive oil
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, combine the rice, ground lamb, onion, tomatoes, tomato paste, parsley, mint, olive oil, cumin, cinnamon, salt, and pepper. Mix well.
- Stuff the bell peppers with the rice and lamb mixture and place them in a deep pot.
- Pour the chicken or vegetable broth over the stuffed peppers.
- Cover the pot and cook on the stovetop over medium heat for 1 hour, or until the peppers are tender and the filling is cooked through.
- Serve the dolma biber hot, garnished with additional fresh herbs if desired.
