Ingredients
- 4 large bell peppers
- 1 cup long-grain rice
- 1/2 lb ground beef
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 tablespoons tomato paste
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
Instructions
- In a large bowl, mix together the rice, ground beef, onion, tomatoes, tomato paste, parsley, mint, garlic, cumin, paprika, cinnamon, salt, and pepper.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- Stuff the bell peppers with the rice and beef mixture, and place them in a deep pot.
- Pour the chicken or vegetable broth over the stuffed peppers.
- Cover the pot and cook the stuffed peppers over medium heat for 45-50 minutes, or until the peppers are tender and the filling is cooked through.
- Serve the Dolma Fil Fil hot, garnished with additional chopped parsley or mint if desired.
