Dolma Kabak (stuffed Zucchini)

Ingredients

  • 4 medium zucchinis
  • 1 cup rice
  • 1 onion, finely chopped
  • 1/2 cup pine nuts
  • 1/4 cup currants
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 cups vegetable broth
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the zucchinis and scoop out the flesh, leaving a 1/4-inch shell. Chop the zucchini flesh and set aside.
  3. In a large bowl, combine the rice, chopped onion, pine nuts, currants, cumin, paprika, cinnamon, salt, and pepper. Mix well.
  4. Stuff the hollowed zucchinis with the rice mixture and place them in a baking dish.
  5. Pour the vegetable broth and olive oil over the stuffed zucchinis.
  6. Cover the baking dish with foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 10 minutes, or until the zucchinis are tender and the rice is cooked.
  8. Serve the dolma kabak hot and enjoy!
