Ingredients
- 4 medium zucchinis
- 1 cup rice
- 1 onion, finely chopped
- 1/2 cup pine nuts
- 1/4 cup currants
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 2 cups vegetable broth
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the zucchinis and scoop out the flesh, leaving a 1/4-inch shell. Chop the zucchini flesh and set aside.
- In a large bowl, combine the rice, chopped onion, pine nuts, currants, cumin, paprika, cinnamon, salt, and pepper. Mix well.
- Stuff the hollowed zucchinis with the rice mixture and place them in a baking dish.
- Pour the vegetable broth and olive oil over the stuffed zucchinis.
- Cover the baking dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the zucchinis are tender and the rice is cooked.
- Serve the dolma kabak hot and enjoy!
