Dolma (kurdish Stuffed Artichokes)

Ingredients
- 4 large artichokes
- 1 cup rice
- 1 onion, finely chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup pine nuts
- 1/4 cup currants
- 2 tomatoes, chopped
- 2 lemons, juiced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Prepare the artichokes by cutting off the top third and trimming the sharp tips of the leaves.
- Scoop out the choke and inner leaves to create a cavity for the stuffing.
- In a bowl, mix together the rice, onion, dill, mint, pine nuts, currants, tomatoes, lemon juice, olive oil, salt, and black pepper.
- Stuff the artichokes with the rice mixture, pressing it firmly into the cavities.
- Place the stuffed artichokes in a large pot and add enough water to cover them halfway.
- Cover the pot and simmer over low heat for 1 hour, or until the artichokes are tender and the rice is cooked.
- Serve the dolma hot, garnished with fresh herbs if desired.
