Ingredients

  • 4 large artichokes
  • 1 cup rice
  • 1 onion, finely chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup pine nuts
  • 1/4 cup currants
  • 2 tomatoes, chopped
  • 2 lemons, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Prepare the artichokes by cutting off the top third and trimming the sharp tips of the leaves.
  2. Scoop out the choke and inner leaves to create a cavity for the stuffing.
  3. In a bowl, mix together the rice, onion, dill, mint, pine nuts, currants, tomatoes, lemon juice, olive oil, salt, and black pepper.
  4. Stuff the artichokes with the rice mixture, pressing it firmly into the cavities.
  5. Place the stuffed artichokes in a large pot and add enough water to cover them halfway.
  6. Cover the pot and simmer over low heat for 1 hour, or until the artichokes are tender and the rice is cooked.
  7. Serve the dolma hot, garnished with fresh herbs if desired.
