Ingredients

  • 4 small to medium-sized squash
  • 1 cup rice
  • 250g ground meat (beef or lamb)
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/4 cup chopped parsley
  • 1/4 cup chopped mint
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 2 cups vegetable or meat broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the squash and scoop out the seeds to create a hollow cavity.
  3. In a bowl, combine the rice, ground meat, onion, tomatoes, parsley, mint, cumin, coriander, cinnamon, salt, and pepper. Mix well.
  4. Stuff each squash with the rice and meat mixture, then place them in a deep pot.
  5. Pour the broth over the stuffed squash, cover the pot, and cook on the stovetop over medium heat for 1 hour, or until the squash is tender and the filling is cooked through.
  6. Serve the dolma hot, garnished with additional herbs if desired.
