Dolma (kurdish Stuffed Squash)
Dolma is a traditional Kurdish dish that consists of stuffed squash, typically served as a main course or as part of a larger spread of mezze. This recipe provides a delicious and nutritious way to enjoy squash, filled with a flavorful mixture of rice, ground meat, and aromatic spices.
Ingredients
- 4 small to medium-sized squash
- 1 cup rice
- 250g ground meat (beef or lamb)
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/4 cup chopped parsley
- 1/4 cup chopped mint
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- 2 cups vegetable or meat broth
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the squash and scoop out the seeds to create a hollow cavity.
- In a bowl, combine the rice, ground meat, onion, tomatoes, parsley, mint, cumin, coriander, cinnamon, salt, and pepper. Mix well.
- Stuff each squash with the rice and meat mixture, then place them in a deep pot.
- Pour the broth over the stuffed squash, cover the pot, and cook on the stovetop over medium heat for 1 hour, or until the squash is tender and the filling is cooked through.
- Serve the dolma hot, garnished with additional herbs if desired.
