Ingredients
- 6 small to medium-sized yellow squash
- 1 cup long-grain rice
- 1/2 lb ground beef or lamb
- 1 onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup tomato paste
- 1 teaspoon allspice
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
- 1 lemon, juiced
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the squash and scoop out the seeds to create a hollow cavity.
- In a bowl, mix together the rice, ground meat, onion, parsley, mint, tomato paste, allspice, cinnamon, salt, and pepper.
- Stuff the hollowed squash with the rice and meat mixture, and place them in a deep pot.
- Pour the chicken or vegetable broth over the stuffed squash, then drizzle with lemon juice.
- Cover the pot and cook on the stovetop over medium heat for 1 hour, or until the squash is tender and the filling is cooked through.
- Serve the dolma kusa hot, garnished with additional fresh herbs if desired.
