Ingredients
- 4 large bell peppers
- 1 cup rice
- 1/2 lb ground beef or lamb
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 tablespoons tomato paste
- 1/4 cup chopped parsley
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, combine the rice, ground meat, onion, tomatoes, tomato paste, parsley, cumin, paprika, salt, and pepper. Mix well.
- Stuff the bell peppers with the rice and meat mixture and place them in a deep pot.
- Pour the chicken or vegetable broth over the stuffed peppers.
- Cover the pot and cook over medium heat for 1 hour, or until the peppers are tender and the filling is cooked through.
- Remove the stuffed peppers from the pot and serve hot.
