Dolma (stuffed Swiss Chard Rolls With Bulgur And Vegetables)
Dolma is a traditional Kurdish dish consisting of stuffed Swiss chard rolls with bulgur and vegetables. This dish is bursting with flavor and makes for a satisfying and nutritious meal.
Ingredients
- 8 large Swiss chard leaves
- 1 cup bulgur
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1 bell pepper, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup olive oil
- 1/4 cup lemon juice
- Salt and pepper to taste
Instructions
- Start by blanching the Swiss chard leaves in boiling water for 2 minutes. Then, transfer them to an ice bath to cool.
- In a bowl, combine the bulgur, onion, tomatoes, bell pepper, parsley, mint, olive oil, lemon juice, salt, and pepper. Mix well.
- Place a Swiss chard leaf on a flat surface and spoon some of the bulgur mixture onto the center of the leaf. Roll the leaf, tucking in the sides as you go, to form a tight roll.
- Repeat with the remaining Swiss chard leaves and bulgur mixture.
- Place the stuffed Swiss chard rolls in a pot, seam side down, and add enough water to cover them. Place a plate on top of the rolls to keep them submerged.
- Cover the pot and cook the dolma over medium heat for 45 minutes, or until the Swiss chard is tender and the filling is cooked through.
- Once cooked, remove the dolma from the pot and let them cool slightly before serving.
