Ingredients

  • 8 large Swiss chard leaves
  • 1 cup bulgur
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1 bell pepper, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • Salt and pepper to taste

Instructions

  1. Start by blanching the Swiss chard leaves in boiling water for 2 minutes. Then, transfer them to an ice bath to cool.
  2. In a bowl, combine the bulgur, onion, tomatoes, bell pepper, parsley, mint, olive oil, lemon juice, salt, and pepper. Mix well.
  3. Place a Swiss chard leaf on a flat surface and spoon some of the bulgur mixture onto the center of the leaf. Roll the leaf, tucking in the sides as you go, to form a tight roll.
  4. Repeat with the remaining Swiss chard leaves and bulgur mixture.
  5. Place the stuffed Swiss chard rolls in a pot, seam side down, and add enough water to cover them. Place a plate on top of the rolls to keep them submerged.
  6. Cover the pot and cook the dolma over medium heat for 45 minutes, or until the Swiss chard is tender and the filling is cooked through.
  7. Once cooked, remove the dolma from the pot and let them cool slightly before serving.
