Ingredients

  • 4 medium zucchinis
  • 1 cup long-grain rice
  • 1/2 lb ground lamb or beef
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut off the tops of the zucchinis and scoop out the flesh, leaving about 1/4 inch thick shells. Chop the scooped-out flesh and set aside.
  3. In a large bowl, combine the rice, ground meat, chopped onion, tomatoes, parsley, mint, tomato paste, cumin, paprika, cinnamon, salt, and pepper. Mix well.
  4. Stuff the zucchini shells with the rice and meat mixture, and place them in a deep pot or Dutch oven.
  5. Arrange any remaining zucchini flesh around the stuffed zucchinis in the pot.
  6. Pour the chicken or vegetable broth over the stuffed zucchinis.
  7. Cover the pot and cook over medium heat for 30-40 minutes, or until the zucchinis are tender and the rice is cooked.
  8. Serve the dolma hot, garnished with additional fresh herbs if desired.
