Dolmades De Gibraltar (gibraltar's Stuffed Vine Leaves)

Ingredients

  • 1 jar of grape leaves, drained and rinsed
  • 1 cup of rice
  • 1 onion, finely chopped
  • 1/2 cup of pine nuts
  • 1/4 cup of fresh dill, chopped
  • 1/4 cup of fresh mint, chopped
  • 1/4 cup of olive oil
  • 1/4 cup of lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the rice, onion, pine nuts, dill, mint, olive oil, lemon juice, salt, and pepper.
  2. Place a grape leaf on a flat surface, shiny side down, and remove the stem.
  3. Put a spoonful of the rice mixture in the center of the leaf.
  4. Fold the bottom of the leaf over the filling, then fold in the sides, and roll it up tightly.
  5. Repeat with the remaining grape leaves and rice mixture.
  6. Place the dolmades in a large pot, seam side down, and add enough water to cover them.
  7. Place a plate on top of the dolmades to keep them submerged, then cover the pot and bring to a boil.
  8. Reduce the heat and simmer for 30 minutes, or until the rice is cooked and the leaves are tender.
  9. Remove from the heat and let the dolmades cool before serving.
