Dolmades De Gibraltar (gibraltar's Stuffed Vine Leaves)

Ingredients
- 1 jar of grape leaves, drained and rinsed
- 1 cup of rice
- 1 onion, finely chopped
- 1/2 cup of pine nuts
- 1/4 cup of fresh dill, chopped
- 1/4 cup of fresh mint, chopped
- 1/4 cup of olive oil
- 1/4 cup of lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the rice, onion, pine nuts, dill, mint, olive oil, lemon juice, salt, and pepper.
- Place a grape leaf on a flat surface, shiny side down, and remove the stem.
- Put a spoonful of the rice mixture in the center of the leaf.
- Fold the bottom of the leaf over the filling, then fold in the sides, and roll it up tightly.
- Repeat with the remaining grape leaves and rice mixture.
- Place the dolmades in a large pot, seam side down, and add enough water to cover them.
- Place a plate on top of the dolmades to keep them submerged, then cover the pot and bring to a boil.
- Reduce the heat and simmer for 30 minutes, or until the rice is cooked and the leaves are tender.
- Remove from the heat and let the dolmades cool before serving.
