Ingredients

  • 4 cups cooked short-grain rice
  • 1 cup julienned carrots
  • 1 cup julienned zucchini
  • 1 cup bean sprouts
  • 1 cup sliced shiitake mushrooms
  • 4 eggs
  • 4 tablespoons gochujang (Korean red chili paste)
  • 4 tablespoons sesame oil
  • 4 tablespoons soy sauce
  • 4 teaspoons sugar
  • 4 teaspoons rice vinegar
  • 4 teaspoons vegetable oil
  • 4 cloves garlic, minced
  • Sesame seeds for garnish

Instructions

  1. Divide the cooked rice among 4 dolsot bowls or regular bowls.
  2. Arrange the julienned carrots, zucchini, bean sprouts, and shiitake mushrooms on top of the rice in each bowl.
  3. In a small bowl, mix together the gochujang, sesame oil, soy sauce, sugar, and rice vinegar to make the bibimbap sauce.
  4. Heat the vegetable oil in a skillet over medium heat and fry the eggs until the whites are set but the yolks are still runny.
  5. Place a fried egg on top of the vegetables in each bowl.
  6. Drizzle the bibimbap sauce over the ingredients in each bowl.
  7. Sprinkle with sesame seeds and serve immediately, stirring everything together before eating.
