Dominican Mofongo

Ingredients
- 4 green plantains, peeled and sliced
- 4 cloves of garlic, minced
- 1/2 cup pork cracklings
- 1/4 cup olive oil
- Salt to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the plantain slices and fry until golden brown, about 5 minutes.
- Remove the plantains from the pot and place them in a large mortar.
- Add the minced garlic and pork cracklings to the mortar.
- Mash the ingredients together using a pestle until well combined.
- Form the mashed plantains into small balls or patties.
- Serve the mofongo as a side dish or with your choice of protein.
