Ingredients

  • 4 green plantains, peeled and sliced
  • 4 cloves of garlic, minced
  • 1/2 cup pork cracklings
  • 1/4 cup olive oil
  • Salt to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the plantain slices and fry until golden brown, about 5 minutes.
  3. Remove the plantains from the pot and place them in a large mortar.
  4. Add the minced garlic and pork cracklings to the mortar.
  5. Mash the ingredients together using a pestle until well combined.
  6. Form the mashed plantains into small balls or patties.
  7. Serve the mofongo as a side dish or with your choice of protein.
