Ingredients

  • 4 ripe plantains, peeled and sliced lengthwise
  • 1 pound ground beef
  • 1 onion, diced
  • 2 bell peppers, diced
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat the olive oil in a large skillet over medium heat. Add the onions, bell peppers, and garlic. Cook until the vegetables are softened.
  3. Add the ground beef to the skillet and cook until browned. Season with oregano, cumin, salt, and pepper. Stir in the tomato sauce and simmer for 5 minutes.
  4. Layer half of the sliced plantains in a greased baking dish. Top with half of the meat mixture and half of the shredded mozzarella and cheddar cheeses. Repeat the layers with the remaining plantains, meat mixture, and cheeses.
  5. Cover the baking dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  6. Let the pastelón de plátano cool for a few minutes before slicing and serving.
