Domoda (beef And Peanut Stew)
Domoda is a traditional Guinean dish that is a flavorful and hearty beef and peanut stew. This dish is a staple in Guinean cuisine and is perfect for a comforting and satisfying meal.
Ingredients
- 1 lb beef, cut into cubes
- 1 cup peanut butter
- 1 onion, chopped
- 2 tomatoes, diced
- 1/2 cup tomato paste
- 3 cups beef or vegetable broth
- 1/2 cup okra, sliced
- 1 scotch bonnet pepper, whole
- Salt and pepper to taste
Instructions
- In a large pot, brown the beef cubes over medium heat.
- Add the chopped onion and diced tomatoes to the pot and cook until the onions are translucent.
- Stir in the peanut butter and tomato paste until well combined.
- Pour in the broth and add the scotch bonnet pepper. Bring the stew to a simmer and cook for 45 minutes, stirring occasionally.
- Add the sliced okra to the stew and continue to simmer for an additional 15 minutes.
- Season with salt and pepper to taste.
- Serve the domoda hot over rice or couscous.
