Ingredients

  • 1 lb beef, cut into cubes
  • 1 cup peanut butter
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1/2 cup tomato paste
  • 3 cups beef or vegetable broth
  • 1/2 cup okra, sliced
  • 1 scotch bonnet pepper, whole
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the beef cubes over medium heat.
  2. Add the chopped onion and diced tomatoes to the pot and cook until the onions are translucent.
  3. Stir in the peanut butter and tomato paste until well combined.
  4. Pour in the broth and add the scotch bonnet pepper. Bring the stew to a simmer and cook for 45 minutes, stirring occasionally.
  5. Add the sliced okra to the stew and continue to simmer for an additional 15 minutes.
  6. Season with salt and pepper to taste.
  7. Serve the domoda hot over rice or couscous.
