Domoda (bonga Fish Curry)

Ingredients
- 1 lb bonga fish, cleaned and cut into pieces
- 1 cup peanut butter
- 1 large onion, finely chopped
- 2 tomatoes, diced
- 1 small eggplant, diced
- 2-3 cups water
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and cook until softened.
- Add the diced tomatoes and eggplant, and cook until they start to soften.
- Add the bonga fish pieces to the pot and cook for a few minutes.
- In a bowl, mix the peanut butter with water to form a smooth sauce.
- Pour the peanut sauce over the fish and vegetables in the pot.
- Stir gently to combine all the ingredients, then cover the pot and let it simmer for about 30 minutes, or until the fish is cooked through and the sauce has thickened.
- Season with salt and pepper to taste.
- Serve the domoda hot with rice.
