Ingredients

  • 2 lbs chicken, cut into pieces
  • 1 cup peanut butter
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 1/2 cup tomato paste
  • 1 cup pumpkin or sweet potato, diced
  • 1 cup okra, sliced
  • 1 scotch bonnet pepper, whole
  • 1 cup water
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the chicken pieces over medium heat.
  2. Add the onions and tomatoes, and cook until the onions are soft.
  3. Stir in the peanut butter and tomato paste until well combined.
  4. Add the pumpkin or sweet potato, okra, scotch bonnet pepper, and water. Season with salt and pepper.
  5. Cover and simmer for 45 minutes to 1 hour, stirring occasionally, until the chicken is tender and the sauce has thickened.
  6. Serve the domoda hot over rice or couscous.
