Domoda (exotic Essence)

Ingredients
- 2 lbs chicken, cut into pieces
- 1 cup peanut butter
- 2 onions, chopped
- 3 tomatoes, diced
- 1/2 cup tomato paste
- 1 cup pumpkin or sweet potato, diced
- 1 cup okra, sliced
- 1 scotch bonnet pepper, whole
- 1 cup water
- Salt and pepper to taste
Instructions
- In a large pot, brown the chicken pieces over medium heat.
- Add the onions and tomatoes, and cook until the onions are soft.
- Stir in the peanut butter and tomato paste until well combined.
- Add the pumpkin or sweet potato, okra, scotch bonnet pepper, and water. Season with salt and pepper.
- Cover and simmer for 45 minutes to 1 hour, stirring occasionally, until the chicken is tender and the sauce has thickened.
- Serve the domoda hot over rice or couscous.
