Ingredients

  • 1 cup peanut butter
  • 2 cups vegetable broth

  • 1/4 cup vegetable oil
  • 1 scotch bonnet pepper, chopped (optional for heat)
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and cook until softened.
  3. Add the diced tomatoes and cook for a few minutes until they start to break down.
  4. Stir in the peanut butter, tomato paste, and vegetable broth, and bring the mixture to a simmer.
  5. Add the oysters and scotch bonnet pepper (if using), and simmer for 20-30 minutes, stirring occasionally.
  6. Season with salt and pepper to taste.
  7. Serve the domoda hot with rice or bread.
