Ingredients
- 1 lb fresh oysters
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1 cup peanut butter
- 2 cups vegetable broth
- 1/2 cup tomato paste
- 1/4 cup vegetable oil
- 1 scotch bonnet pepper, chopped (optional for heat)
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and cook until softened.
- Add the diced tomatoes and cook for a few minutes until they start to break down.
- Stir in the peanut butter, tomato paste, and vegetable broth, and bring the mixture to a simmer.
- Add the oysters and scotch bonnet pepper (if using), and simmer for 20-30 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Serve the domoda hot with rice or bread.
