Domoda (smoky Fish Curry)
Domoda is a popular Gambian dish that features a rich and smoky fish curry served over rice. This flavorful and comforting meal is a staple in Gambian cuisine, and it's perfect for a cozy dinner at home.
Ingredients
- 1 lb smoked fish, flaked
- 1 cup peanut butter
- 2 onions, chopped
- 3 tomatoes, diced
- 1/2 cup tomato paste
- 2 cups water
- 1/4 cup vegetable oil
- 1 scotch bonnet pepper, chopped
- 1 cup okra, sliced
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and cook until softened.
- Add the tomatoes, tomato paste, and scotch bonnet pepper. Cook for 5 minutes, stirring occasionally.
- Stir in the peanut butter and water, then add the flaked smoked fish. Simmer for 20 minutes, stirring occasionally.
- Add the okra and cook for an additional 10 minutes, or until the okra is tender.
- Season with salt and pepper to taste.
- Serve the smoky fish curry over cooked rice.
