Domoda (smoky Fish Curry)

Ingredients

  • 1 lb smoked fish, flaked
  • 1 cup peanut butter
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 1/2 cup tomato paste
  • 2 cups water
  • 1/4 cup vegetable oil
  • 1 scotch bonnet pepper, chopped
  • 1 cup okra, sliced
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and cook until softened.
  2. Add the tomatoes, tomato paste, and scotch bonnet pepper. Cook for 5 minutes, stirring occasionally.
  3. Stir in the peanut butter and water, then add the flaked smoked fish. Simmer for 20 minutes, stirring occasionally.
  4. Add the okra and cook for an additional 10 minutes, or until the okra is tender.
  5. Season with salt and pepper to taste.
  6. Serve the smoky fish curry over cooked rice.
