Domoda (smoky Fish Stew)
Domoda is a popular Gambian dish that features a rich and flavorful peanut sauce with smoky fish. This hearty stew is a staple in Gambian cuisine and is perfect for a comforting and satisfying meal.
Ingredients
- 1 lb smoked fish, deboned and flaked
- 1 cup peanut butter
- 1 large onion, chopped
- 2 tomatoes, chopped
- 1/2 cup tomato paste
- 1/4 cup vegetable oil
- 4 cups water
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onions and cook until softened.
- Stir in the tomato paste and cook for 2-3 minutes.
- Add the chopped tomatoes and cook until they start to break down.
- Stir in the peanut butter and gradually add the water, stirring to combine.
- Bring the mixture to a simmer and let it cook for 30 minutes, stirring occasionally.
- Add the flaked smoked fish to the pot and simmer for an additional 15 minutes.
- Season with salt and pepper to taste.
- Serve the domoda hot over cooked rice or couscous.
