Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup peanut butter
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1/2 cup tomato paste
  • 2 cups chicken broth
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 8 ounces spaghetti or noodles of your choice

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onion and cook until softened.
  2. Add the diced tomatoes, tomato paste, and peanut butter to the pot. Stir well to combine.
  3. Pour in the chicken broth and stir until the peanut butter mixture is well incorporated.
  4. Add the cayenne pepper, paprika, salt, and pepper. Stir to combine and bring the mixture to a simmer.
  5. Add the shrimp to the pot and cook for 5-7 minutes, or until they are pink and fully cooked.
  6. Cook the spaghetti or noodles according to the package instructions. Drain and set aside.
