Domoda (spicy Peanut Stew)

Ingredients

  • 2 lbs chicken thighs, cut into pieces
  • 1 cup creamy peanut butter
  • 1 onion, diced
  • 3 tomatoes, chopped
  • 1/2 cup tomato paste
  • 2 cups chicken broth
  • 1 scotch bonnet pepper, chopped
  • 1/2 cup okra, sliced
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chicken pieces and brown them on all sides.
  2. Add the diced onion and chopped tomatoes to the pot. Cook until the onions are soft and the tomatoes have broken down.
  3. Stir in the peanut butter, tomato paste, and scotch bonnet pepper. Pour in the chicken broth and stir to combine all the ingredients.
  4. Simmer the stew for 45 minutes, stirring occasionally to prevent sticking.
  5. Add the sliced okra to the stew and continue to simmer for an additional 10 minutes.
  6. Season with salt and pepper to taste.
  7. Serve the domoda hot over steamed rice or couscous.
